  • I would often make my own bread in my bread maker. They have great already prepared gluten free bread mix at your local health food store. One brand that we had and still do use is Authentic Foods. You can probably find a less expensive way by buying brown rice flour and mixing it with some other flours. I also bought-in the freezer section-Food For Life brown rice bread.

  • I would buy the turkey at Whole Foods or Wild Oats-antibiotic/hormone free.

  • I would use the Safflower mayonnaise. The Safflower mayonnaise does contain egg and a little bit of sweetener. If there is an allergy you will have to come up with something else-possibly mustard or tomato sauce. Olive oil or olive oil and Balsamic Vinegar is good.

  • I only used organic free-range chicken breaded with a mixture of brown rice flour and corn flour or millet flour or sorghum flour. We would use a little rice milk or egg whites to keep the flour mixture stuck on the chicken. Fry it on low heat with either coconut oil or olive oil. I never used canola or any other oils.

  • He loved Ketchup. If we did not pour the ketchup out of the bottle in front of him he would freak out. So, of coarse, when he was not in the kitchen we would take a can of organic tomato sauce and add only Celtic salt to it, and put it in an empty Ketchup bottle. This made it taste very similar to Ketchup but without the sugar or sweeter.

  • I was told by one of my doctors that we could use organic GHEE or RAW organic butter.

  • I also used a lot of Body Bio oil and Udo's oil to put on foods after they had been cooked. These come from plant oils.

  • On occasion I would make a shake using a variety of ingredients including, almond milk, rice milk, or hazelnut milk, almond butter, bananas, vitamin C, flax oil and Borage oil (a mixture similar to Udo's oil or Body Bio oil). We also used a scoop of Ultra Care for Kids by Metagenics. I would add something green (Green Vibrance) or I would mix it with fruit-strawberries and blueberries or blackberries (whatever combo they like best). Be sure that all fruit is organic.

  • We would use Kirkman's Labs pancake mix and their sugar free syrup. I would also use Agave Nectar or brown rice syrup for sweetener. If you can't use sugar, stick with sugar free, but do not use aspartame-this is the worst sweetener you could use. There is a lot of research about it. Check out the book, “Sweet nor Dearest”.

  • I would be very cautious about the other artificial sweeteners because you don't know how they will react to this stuff. It's good to stick with no sugar at all or a small amount of Agave Nectar and brown rice syrup or xylitol. It is sweet, but don't eat too much of it because the xylitol can cause bloating and diarrhea.

  • Kirkman's Labs has scFOS (Fructooligosaccharides), which is actually very good for the intestinal tract. We would dip strawberries in the scFOS and it tasted yummy.

      When we worked on bringing his yeast down in his intestinal track we had him on positively no sugar, fruit, fruit juice, or cookies. That really seemed to help him once we got that under control, and he seemed to hold strong. For a while we slowly brought back some fruit and an occasional low sugar cookie or a Rice Dream ice cream bar. That was a special treat.

      In almost every health food store you can get Gluten Free products. It is very accessible to everyone today. The casein is a little more difficult. If your child likes goat cheese or sheep cheese, even better. That is a good alternative. We pretty much had to stay away from all dairy, except GHEE clarified organic butter.

      We looked at info about raw organic milk. This could be an option. Look into Organic Pastures. They sell RAW organic milk. They have an interesting article on autism and RAW milk.

      I always try to buy everything organic, especially fruits, vegetables and meats. Using pesticide, chemical, and hormone free food could have been the key in helping Jamie take a load off his system. 99.99% of our foods were and still are organic. It's fun to grow your own garden too. I did this in Colorado . Veggies are yummy!!
